So today I made it upon my own, Yeah I did not like any of the recipes I was finding for pumpkin pie filling or the crust so I just looked at them all and did it my self. Crust needs Flour,butter/ shortening and salt for the most simple of Recipes, and pumpkin pie well calls for spices, sugar, eggs, evaporated milk and of course Pumpkin. So not ever doing it before but using all my home taught knowledge I made what I could. so here is what I did.
I love a good Cinnamon flavored crust so for my crust I did this.
I used
1 1/2 sticks of unsalted butter
2 tsp sugar
1/2 tsp salt
2 Tsp Cinnamon
2 cups flour
5 tbsp cold water
I first mixed all my dry ingredients together then I cut in my butter. With me I have no fancy things like a shortening cutter so two knifes is what I used. Once cut together till looks like a bunch of tiny balls forming add in the water slowly ( may need more water just add slowly) use fork til you give up and use your hands to form a dough that looks very much like cookie dough ( does not taste like cookie Dough just FYI), next form into ball flatten into a disk shape and cover placing in fridge to chill for 30 min or how ever long it takes to clean up your 3 year old son after he comes to you telling you " mommy I pooped' see" and has a handful of his own waste in his hand, and after that make the pumpkin pie mix.
Cubing the butter before hand can make it easier.

for the pie filling I had a harder time because I bought stuff from the store the other day thinking I had seen an easy recipe for pumpkin pie some where with the ingredients I bought then poof gone, I could not find my recipe so... I made it up as well. I figured I could make a pumpkin pie!
So I used:
2 eggs beaten
3/4 cups sugar
1/2 salt
3 Tsp pumpkin spice
15 Oz pumpkin
10 Oz evaporated milk
3 Tbsp Vanilla
In a small bowl mix sugar and spice ( and every thing that is nice) salt too
In a medium bowl beat eggs and then add in pumpkin and the sugar and spice mix, blend well. I did all this with a hand mixer. Once mixed move over to a spoon the mixer will get messy this next step, slowly add in your evaporated milk and vanilla. tada! ready to add to the crust that still needs to be rolled out.
so for me I dont have a fancy thing called a Rolling pin so a sippy cup was what I used even tho my son was crying for it the whole time and also my pyrex bowl lid worked amazing for a like cutter for the pie crust largest size I have and it fit perfect! Buttered the pie pan inches ( would be better bigger as an after thought). Make the pie crust edges fancy lol and add in the pie filling. Bake At 42 for 50 min or until you can stab it with a knife and it comes out clean.

If you want the design on it I would wait for it to bake like 20 min and then place them on there or else it will just sink, Plop.
So I took it to a Diner and game night with some friends and it turned out great! The only thing that could be better it would be the crust got alittle too done I think a bigger pan would work better.
